
You will need a heavy bottomed frying (ideally cast iron), baking parchment and a grill.
Ingredients:
For four 12″ Pizzas
For the Dough:
800g Strong white bread flour
25g Fresh yeast or 14g Dried Yeast
600ml cold water
1 and a half tsp salt
For the Toppings:
1 Jar of good quality tomato sauce.
Fresh Oregano
Toppings of your choice

Method:
For the dough:
- Dissolve the yeast into the water and add to the flour and salt.
- If you are using a stand mixer, use the dough hook and beat on a medium speed for 5-7 minutes until the dough is stretchy and smooth. If kneading by handbring everything together in a large bowl then transfer to a flat surface and knead for 10 minutes until the dough is stretchy and smooth.
- Lightly grease a large bowl (at least 3 x the volume of the dough) with a little olive oil and put the kneaded dough in. Clingfilm and leave in the fridge overnight.
To Finish the Pizzas:
- About 2 hours before you want to cook the pizzas take the dough out of the fridge and split into four equal balls.
- Cut four pieces of baking parchment the size of your frying pan.
- Roll out the pieces of pizza dough on a lightly floured surface to roughly two thirds the size of the baking parchment, then using your hands stretch the dough a little at a time, working it from the centre to the edge until it is the same size as the parchment. Put the pizza bases onto the pre-cut baking parchment.
- Spread the tomato sauce onto the bases leaving about 2cm of crust around the edge, add some chopped oregano and then your toppings. Leave at room temperature for 1 and a half to two hours.

- 20 minutes before you cook your first pizza put your frying pan on the heat and light your grill on the highest settings.
- Carefully slide your first pizza into the pan and cook until the dough has risen and the bottom of the pizza is crispy. this will take about 3 minutes.

- Next transfer the pan to the grill to finish the top of the pizza, this will take about a further 3 minutes.
- Remove the pizza from the pan and put it back onto the heat ready for the next pizza.
