Mackerel cooked ‘en papillote’ with veg and masala butter.

Ingredients:

Masala butter:

This will make enough for 4 mackerel parcels.

2 tblsp garam masala

250g butter

1/2 tsp salt

1/4 tsp ground white pepper.

Mackerel: (per parcel)

1 mackerel per person, approx 400g fish (gutted, head removed and slashed 3 times up the sides)

3 new potatoes, sliced 3-4mm thick

1 small carrot, cut into thin strips

100g prepared green beans

a few strands of shredded ginger

1 clove of garlic thinly sliced.

2 slices of lime

1 tblsp chopped coriander

2 tblsp vegetable oil

To Serve:

Mint yoghurt

Flatbread

Method:

_For the masala butter, mix the garam masala with softened butter, the salt and pepper.

-Preaheat the oven to 200 degrees C/gas mark 6.

-Lay a piece of Tin Foil out on a flat surface with a piece of baking parchment on top the same size, big enough to tightly wrap the fish and veg.

-In a bowl mix all the veg with the oil, the ginger, the coriander and the garlic, lightly season with salt and pepper and lay on the baking parchment.

-Rub the fish with the masala butter, making sure it goes inside the where the fish is slashed.

-Place the fish on top of the veg with the lime slices and wrap up tightly.

-Place the parcels on a baking tray and place in the oven for 25 minutes.

-Remove from the oven, open the parcels and serve with the flat breads and mint yoghurt.
